Yum! Quick kale zucchini pasta dinner recipe

Did you know there are magical fairies that create foods with basically no calories? That are actually nutritious and delicious? Like you would choose them over other things? It’s true. Meet Zucchini “Pasta.”

When I first heard about zucchini pasta, it seemed like a mean trick…the kind of thing we might fantasize about trying to sneak into meals for the kids to try to get them to eat their veggies. But, as this recipe will show you, some things are just magic.

Zucchini pasta by itself has just 12 calories per serving! And this dish is pretty much all veggies…but it is so satisfying, you’d never guess it.

Quick and Delicious Zucchini Pasta

(Serves one – just multiply for multiple people. 🙂



Vegetable broth

Butter (just a pat – you can use olive oil instead or omit altogether if your sundried tomatoes are packed in oil.)

Veggie Noodle Co. (Or homemade) Zucchini Spirals

Sundried tomatoes – I dry packed julienne cut ones from California Sun Dry

Pink salt (or regular salt works too)

How to make kale zucchini pasta that is unbelievably delicious

Heat a skillet to medium-high heat. Add the pat of butter or about a teaspoon of oil and a splash of vegetable stock.

Wilt a full handful of kale in the the pan. Add a small handful of sundried tomatoes – I added about 8-10 julienne cut sundried tomatoes.

Now add a couple of handfuls of spiral cut zucchini and sauté the whole thing for 3-4 minutes until the zuchinni is slightly cooked but still has a slight “al dente” bite. Add splashes of veggie stock or water if it starts to smoke or burn. (Ideally, before it happens! Haha)

Add salt and pepper to taste. Enjoy!!
